ABSTRACT An improved process for degrading suspended matter in polysaccharide solutions produced in xanthomonas fermentation of carbohydrates, which involves treatment of the polysaccharide solution with an enzyme complex having cell-lytic,.beta.-1,3-glucanase, and protease activity derived from Pellicularia filamentosa and/or Pellicularia sasakii; together with a solid composition containing said polysaccharide and up to 0.5% wt. of the said enzyme complex.
