ABSTRACT The disclosure describes a yoghurt-like food obtained by coagulating soya milk with protease and a coagulant for tofu. The coagulant is also described. It consists of protease and a coagulant for tofu. The preparation includes adding protease and a coagulant for tofu to soya milk, and then coagulating the resulting mixture at 50 to 90°C for 0.5 to 1 hour.
