ABSTRACT OF THE DISCLOSURE In order to provide improved storage properties and aromatization, jujubes are moulded in suitable moulds having a desired shape; they are then dried and refrigerated immediately at a low temperature to give them a rigid consistency; then they are coated with a varnish layer thick enough to provide a barrier to moisture and aromatizing; constituents and the varnish is dried in air at a remperature lower than 20°C; finally the jujubes are provided with an aromatized sugar coating.
