A method of coating comestibles comprises the steps of providing cores of comestibles to be coated; applying a first coating syrup to the cores and a powder material over the first coating syrup in alternating steps to build up a first layer of coating on the cores; and applying a second coating syrup over the first layer of coating and drying the second coating syrup to form a second layer of coating on said cores, the second coating syrup comprising a bulk sweetener in an amount such that the second coating syrup is saturated and part of said bulk sweetener is in the form of a solid suspension in the second coating syrup.

La présente invention concerne un procédé d'enrobage de produits comestibles se décomposant en plusieurs opérations. Après avoir appliqué un premier sirop d'enrobage sur des noyaux de produits comestibles, on applique un matériau pulvérulent sur le premier sirop d'enrobage par cycles successifs jusqu'à accumuler la valeur d'une première couche d'enrobage sur les noyaux. Le procédé consiste alors à appliquer sur la première couche d'enrobage une seconde couche de sirop et à la laisser sécher jusqu'à obtenir une seconde couche d'enrobage sur les noyaux. En l'occurrence, cette seconde couche de sirop d'enrobage comprend une quantité d'édulcorant en vrac saturant le second sirop d'enrobage. Une partie de cet édulcorant en vrac se présente sous forme d'une suspension de solides dans le second sirop d'enrobage.
