Abstract Lengthwise coextensively aligning jerky which has fiberous portions aligned generally parallel to the length of the jerky, and a procedure for preparing the lengthwise coextensively aligning jerky or otherwise coextensively aligning jerky by extruding an alignable meat dough through an appropriately-sized, for example, one-inch by four-inch, loaf horn and/or a directional flow bar extruder, as appropriate, under conditions such that fibers in the dough are in general coextensively aligned, further preparing, if necessary, the fiber-aligning dough into cuttable jerky, for example, by freezing, and cutting and/or slicing the cuttable jerky under conditions which prepare the desired coextensively aligning jerky. Drying can be carried out in various manners including, for example, in an oven. The resulting lengthwise coextensively aligning jerky typically has a generally rugged, natural-like appearance, eel and so forth. The procedure can be highly efficient and industrially favorable, especially with employment of the apparatus having the directional flow bar extruder of, say, twenty or more inches in width.
