COFFEE PACKING PROCESS AND PRODUCT ABSTRACT Roasted and ground coffee is packed in less than one hour after grinding by pre-purging freshly ground coffee contained in a can to below 6% oxygen at atmospheric pressure by introducing one or more gas probes through the coffee and utilizing a flow of carbon dioxide through the coffee and thereafter further reducing the oxygen content to below 2% by utilizing a partial vacuum of less than 10 inches of Hg and backflushing with carbon dioxide gas at a pressure within 1 to 5 pounds per square inch gauge and finally sealing the can while maintaining the positive headspace pressure.
