A continuous process for cold de-aeration of citrus juice wherein the juice is at a temperature between 32~F and 50~F and is subjected to a vacuum of between approximately 28 and 30 inches mercury for 10 to 20 minutes to produce a de- aerated citrus juice.

La présente invention a trait à un procédé continu de désaréation à froid de jus d'agrumes dans lequel le jus est à une température comprise entre 32 ·F et 59 ·F et est soumis à un vide compris entre environ 28 et 30 pouces de mercure pendant 10 à 20 minutes en vue de produire un jus d'agrumes désaéré.
