A plurality of polypeptides derived from intercellular spaces of plant cells having frost tolerance. Some of the polypeptides are ice nucleators for developing ice crystals in extracellular spaces of plant tissue, some of the polypeptides are antifreeze components which control ice crystal growth in extracellular spaces and some of the polypeptides are enzymes which adapt plant cell walls to function differently during formation of ice crystals in plant intercellular spaces. The group of polypeptides have molecular weights of 5 kD, 9 kD, 11 kD; 22 kD, 24 kD, 30 kD, 36 kD, 60 kD and 68 kD.

On décrit une pluralité de polypeptides dérivés des espaces intercellulaires de cellules de végétaux possédant une résistance au givre. Certains de ces polypeptides servent à la nucléation de la glace pour la création de cristaux de glace dans les espaces extracellulaires des tissus des végétaux: d'autres polypeptides ont une fonction antigel pour réguler la croissance des cristaux de glace dans les espaces extracellulaires, et d'autres polypeptides encore sont des enzymes qui adaptent les parois des cellules des végétaux de manière à fonctionner de manière différente pendant la formation des cristaux de glace dans les espaces intercellulaires. Les poids moléculaires du groupe de polypeptides sont: 5 kD, 9 kD, 11 kD, 22 kD, 24 kD, 30 kD, 36 kD, 60 kD et 68 kD.
