The present invention provides a combination continuous and batch filtration system for a recirculating fryer (10) where the continuous filter (26) and batch filter (30) assemblies are integrated into a single unit (18), utilizing a common pump (54). This unit is substantially compact and is therefore able to fit within the frame of most recirculating fryers. The outlets (34, 44) of the continuous filter (26) and the batch filter (30) are connected to a two- way valve (42), which is, in turn, connected to the inlet (52) of the common pump (54). The valve (42) allows an operator to selectively pump cooking fluid from either the continuous filter (26) or the batch filter (30) back into the fryer vat (14).
L'invention concerne un système de filtration continu et discontinu combiné pour friteuses à recirculation (10), les ensembles filtre continu (26) et filtre discontinu (30) étant intégrés dans une seule unité (18) et une pompe commune (54) étant utilisée. Ladite unité est sensiblement compacte est peut ainsi s'adapter dans le cadre de la plupart des friteuses à recirculation. Les sorties (34, 44) du filtre continu (26) et du filtre discontinu (30) sont reliées par une soupape bidirectionnelle (42) qui est, à son tour, reliée à l'entrée (52) de la pompe commune (54). La soupape (42) permet à un opérateur de pomper sélectivement le fluide de cuisson, soit dans le filtre continu (26), soit dans le filtre discontinu (30) et de le renvoyer dans la cuve (14) de la friteuse.
