In the production of potable alcohols, a continuous fermentation stage is employed to pitch and/or initially ferment a wort containing fermentable sugars. An exemplary continuous stage involves the use of a gas lift bioreactor employing superflocculant yeast and stringent oxygen control. The continuous stage can then be followed by sending an at least partially fermented discharge from the continuous process to a batch processing stage for finishing.

Dans la production de boissons alcoolisées, on utilise une étape de fermentation en continu pour mettre en levain et/ou fermenter initialement un moût contenant des sucres fermentables. A titre d'exemple, une phase en continu implique l'utilisation d'un bioréacteur gazosiphone utilisant de la levure superflocculante et un contrôle rigoureux de l'oxygène. La phase en continu peut ensuite être suivie par une phase consistant à envoyer depuis le processus en continu une décharge au moins partiellement fermentée vers un phase de traitement par lot pour obtenir le produit fini.
