A method for the commercial production of chymosin which involves the recombinant expression of chymosin in plant seeds, that enables chymosin to accumulate to at least 0,5 % (w/w) of total seed protein is described. An improved method for the isolation of chymosin from the seed is also described.
L'invention porte sur un procédé visant à produire de la chymosine à un niveau industriel et comprenant l'expression par recombinaison de la chymosine dans les graines des plantes, ce qui permet à la chymosine d'accumuler jusqu'à au moins 0,5 % (en poids) de la protéine brute des graines. L'invention porte également sur un procédé consistant à isoler la chymosine des graines.
