Abstract of the Disclosure A method for the manufacture of food products consisting of an inner filler (e.g., frozen dessert like ice cream) and an outer layer of cooked dough. The filling is enclosed within a layer of farinaceous dough which has an inner layer forming a protective backing. The assembly is subjected to controlled cooking in such a manner that the outer dough layer is cooked without substantial modi- fication of the filling or the protective backing. A number of techniques are disclosed for carrying out the cooking operation, including baking in an oven, deep-fat fry- ing, and introduction into hot oil while the oil is being subjected to a partial vacuum. Also food products result- ing from the method, including products that have been cooked as described above, and assemblies before cooking which can be stored under refrigeration and marketed as such. - 1 -
