ABSTRACT A method and composition for immobilizing biocata- lytic entities suitable for ethanol fermentation pro- cesses includes mixing a biocatalytic entity with the reaction product of a homogeneous dispersion of an anionic form of alginate with polyethyleneimine, and com- bining the resultant biocatalyst-alginate-polyethylene- imine dispersion with an oil phase to form beads. The beads are suitable for continuous ethanol fermentation processes.
