Fish oil concentrates, having: 40 % of long chain poly unsaturated fatty acids, < 20 % of saturated fatty acids (C14-C18), < 15 % oleic acid, < 12 % C16:1 - fatty acid, and with a weight-ratio: <u>DHA</u> = 0.5 - 3.0, EPA, can be obtained by a process involving the following steps: subjecting a fish oil to an enzymic conversion, removing free fatty acids or esters from conversion product, subjecting product of above to enzymic hydrolysis, using 1.3-specific lipase or partial glyceride-specific lipase, wash and dry product, re-esterify dried product.

Des concentrés d'huiles de poisson possèdent: ? 40 % d'acide gras polyinsaturés à chaîne longue, < 20 % d'acides gras saturés (C¿14?-C¿18?), < 15 % d'acide oléique, < 12 % d'acide gras C¿16:1?, le rapport pondéral <u>DHA</u>/EPA étant compris entre 0,5 et 3,0. On peut obtenir ces concentrés à l'aide d'un procédé comprenant les étapes suivantes consistant: à soumettre une huile de poisson à une conversion enzymatique, à enlever les acides gras libres ou esters du produit de conversion, à soumettre le produit ci-dessus obtenu à une hydrolyse enzymatique, en utilisant une lipase sélective en position 1.3 ou une lipase présentant une spécificité à l'égard de glycérides partiels, à laver et sécher le produit, puis à estérifier à nouveau le produit séché.
