The present invention relates generally to the field of food and drinks. In particular, for example, a composition is provided that allows to provide tartaric and/or caffeic acid to a subject. One embodiment of the present invention is a composition comprising an ingredient containing caftaric acid and/or derivatives thereof, and a lactic acid bacterium capable of hydrolysing caftaric acid and/or derivatives thereof to generate tartaric and/or caffeic acid.
La présente invention concerne, de façon générale, le domaine de la nourriture et des boissons. Elle concerne, en particulier et par exemple, une composition permettant de fournir de l'acide tartrique et/ou caféique à un sujet. Un mode de réalisation de la présente invention correspond à une composition comprenant un ingrédient contenant de l'acide caftarique et/ou des dérivés de celui-ci, ainsi qu'une bactérie lactique capable d'hydrolyser l'acide caftarique et/ou ses dérivés, en vue de la production d'acide tartrique et/ou caféique.
