The present invention relates to a method for the manufacture of a composition comprising proteins and fats, said method providing a simple and non-expensive way of obtaining fat-containing proteinaceous products of high nutritional value that are easy to handle and at the same time possess high stability towards coalescence and oxidation. More particularly, a method is provided for the manufacture of a composition comprising protein and fat in disperse form, the method comprising the following steps: (i) providing a suspension having a pH value higher than 7.0, said suspension comprising water, proteinaceous material, fat, and optionally alkali; (ii) incubating the suspension from (i) at a temperature in the interval 50 - 150 °C; (iii) homogenizing the suspension from (ii) to form a dispersion; and (iv), if desired, subjecting the dispersion from (iii) to a subsequent treatment; wherein the proteinaceous material in step (i) comprises vegetable-based proteinaceous material, and/or yeast-based proteinaceous material; wherein the suspension in step (i) comprises at least 5 % fat by weight of dry matter. The current invention also relates to the compositions obtained by the method and to compositions obtainable by the method of the invention and, further, to the use of these compositions.

La présente invention porte sur un procédé de fabrication d'une composition comprenant des protéines et des graisses, ledit procédé fournissant une façon simple et non coûteuse d'obtenir des produits protéinés à teneur en graisse de haute valeur nutritionnelle qui sont faciles à manipuler et en même temps possèdent une stabilité élevée envers la coalescence et l'oxydation. Plus particulièrement, l'invention porte sur un procédé de fabrication d'une composition comprenant des protéines et des graisses sous forme dispersée, le procédé consistant à : (i) se procurer une suspension ayant une valeur de pH supérieure à 7,0, ladite suspension comprenant de l'eau, de la matière protéinée, de la graisse et facultativement de la matière alcaline ; (ii) faire incuber la suspension provenant de (i) à une température se situant dans l'intervalle de 50 - 150 °C ; (iii) homogénéiser la suspension provenant de (ii) pour former une dispersion ; et (iv), si on le désire, soumettre la dispersion provenant (iii) à un traitement ultérieur, la matière protéinée à l'étape (i) comprenant de la matière protéinée à base de matière végétale et/ou de la matière protéinée à base de levure, la suspension de l'étape (i) comprenant au moins 5 % de graisse en poids de matière sèche. La présente invention porte également sur les compositions obtenues par le procédé et sur des compositions pouvant être obtenues par le procédé de l'invention et, en outre, sur l'utilisation de ces compositions.
