The invention relates to a composition which comprises component (1) and at least one of components (2), (3) and (4): (1) a completely water-soluble antioxidant which is a Labiatae tissue extract containing sodium rosmarinate; (2) ascorbic acid, isoascorbic acid and (or) their non-toxic water-soluble salts in a weight ratio to sodium rosmarinate of 1.5:1 to 90:1; (3) citric acid, its non-toxic salts, and (or) non-toxic water soluble salts of acetic and (or) lactic acids; (4) at least one non-toxic salt of propionic acid. Embodiments of such compositions are useful for enhancing the antioxidative protection afforded to meat products, or to edible oils or fats (or foodstuffs containing them), and for enhancing inhibition of microbial deterioration in foodstuffs provided by the acids and salts specified in ingredients (3) and (4).

L'invention concerne une composition comprenant au moins un constituant (1) et au moins un des constituants (2), (3) et (4) : (1) un antioxydant entièrement soluble dans l'eau qui est un extrait tissulaire de Labiatae, contenant du rosmarinate de sodium ; (2) acide ascorbique, acide isoascorbique et (ou) leurs sels non toxiques solubles dans l'eau, dans un rapport en poids au rosmarinate de sodium de 1,5 :1 à 90 :1 ; (3) acide ascorbique, ses sels non toxiques, et (ou) des sels non toxiques solubles dans l'eau d'acides acétiques et (ou) d'acides lactiques ; (4) au moins un sel non toxique d'acide propionique. L'invention concerne des modes de réalisation de ces compositions, s'utilisant pour renforcer la protection antioxydante conférée aux produits carnés, aux huiles ou aux graisses comestibles (ou aux produits alimentaires les contenant), ainsi que pour renforcer l'inhibition de la dégradation microbienne dans les produits alimentaires, par le biais des acides et des sels spécifiés dans les ingrédients (3) et (4).
