A method of enhancing or improving the flavor of usual foods or drinks by using a non-volatile thiazolidine compound optionally together with a non- volatile flavor compound and/or a reaction flavor; a convenient and effective method for preventing deterioration in flavor in the step of pasteurizing a retort food and regulating its offensive smell at intake to thereby improve the flavor; and a convenient and effective method for regulating the greenish offensive smell characteristic to processed soybean product to thereby improve the flavor.
L'invention concerne un procédé permettant d'exhaler ou d'améliorer la saveur de boissons ou d'aliments usuels au moyen d'un composé de thiazolidine non volatil éventuellement associé à un composé de saveur non volatil et/ou à une saveur de réaction. L'invention concerne également un procédé efficace et approprié permettant d'empêcher la détérioration d'une saveur au moment de la pasteurisation d'un aliment stérilisé en autoclave, et de réguler son odeur désagréable au moment de l'ingestion de façon à améliorer la saveur. L'invention concerne enfin un procédé efficace et approprié permettant de réguler la caractéristique d'odeur désagréable prononcée d'un produit de soja traité, ce qui améliore sa saveur.
