A tomato composition obtained from tomato juice having the following composition in percentage by weight: dry residue >20% up to 99%, water < 80% down to 1%; 100% being the sum of the two components, wherein the among of water insoluble solids in the dry residue ranges in percentage by weight from 18% to 70%.

L'invention concerne une composition à base de tomates obtenue à partir de jus de tomates et présentant la composition suivante, en pourcentage en poids : résidu sec >20 % à 99 %, eau < 80 % à 1 % ; 100 % étant la somme de ces deux composants. Le taux de solides insolubles dans l'eau contenus dans le résidu sec est compris entre 18 % et 70 % en poids.
