A confectionery aeration system has a confectionery vessel (1; 1') for holding aerated confectionery material and provided in the lower part thereof with at least one feed outlet (3; 17) for feeding aerated confectionery to a confectionery producing process. A confectionery material re-circulation circuit (7) connects a re-circulation outlet (8) of the vessel to an inlet (9) of the vessel, the re-circulation circuit being provided with an aerator (12) arranged to aerate confectionery material flowing from the re-circulation outlet to the vessel inlet. The inlet (9) of the vessel (1) is provided with a back-pressure producing means (10) for maintaining a super-atmospheric pressure in the confectionery material in that part of the re-circulation circuit between the aerator and the vessel inlet. Fresh confectionery material is supplied to a supply connection (24) in the re-circulation circuit located upstream of the aerator. Excess confectionery material in the vessel (1) may be returned (25) to the fresh supply by way of a de-aeration unit and tempering unit. In a pre-existing installation provided with a supply hopper (16) the feed outlet (17) of the vessel leads into the supply hopper (16).
L'invention concerne un système d'aération pour confiseries comprenant une cuve à confiserie (1; 1') destinée à renfermer une matière de confiserie aérée et pourvue, au niveau de sa partie inférieure, d'au moins un orifice (3; 17) d'alimentation destiné à introduire la confiserie aérée dans un procédé de production de confiseries. Un circuit (7) de recyclage de la matière de confiserie relie un orifice (8) de recyclage de la cuve à un orifice (9) d'entrée de la cuve, ledit circuit de recyclage étant équipé d'un aérateur (12) disposé de manière à aérer la matière de confiserie s'écoulant de l'orifice de recyclage à l'orifice d'entrée de la cuve. Cet orifice (9) d'entrée de la cuve (1) est assorti de moyens (10) de production d'une contre-pression destinés à maintenir une pression superatmosphérique dans la matière de confiserie au niveau de la partie du circuit de recyclage comprise entre l'aérateur et l'orifice d'entrée de la cuve. La matière de confiserie brute arrive par un raccord (24) d'alimentation dans le circuit de recyclage situé en amont de l'aérateur. La matière de confiserie en excès dans la cuve (1) peut être renvoyée à l'alimentation en matière brute via une unité désaération et une unité de tempérage. Dans une installation préexistante pourvue d'une trémie (16) d'alimentation, l'orifice (17) d'alimentation de la cuve mène à la trémie (16) d'alimentation.
