The invention relates to confectionery of long shelf-life in the form of a soft, creamy, foamed mass of stable form, comprising milk components, edible fats, sugar and/or artificial sweeteners and water, whereby at least part of the edible fat is in crystalline form at room temperature. The confectionery contains no lactose crystals which may be detected by the consumer, the milk protein content is 6 to 20 wt. %, the fat-free milk dry mass is in the range of 16 to 55 wt. % and the denaturation level of the milk protein is <= 20 %.

Préparation alimentaire sucrée de longue conservation sous forme de masse molle, crémeuse, à stabilité de forme et battue en mousse qui contient des constituants du lait, des matières grasses alimentaires, du sucre et/ou des édulcorants et de l'eau. Dans ladite préparation, au moins une partie des matières grasses alimentaires est présente sous forme cristallisée à température ambiante. Cette préparation ne contient pas de cristaux de lactose détectables par le consommateur. Elle contient des protéines du lait à raison de 6 à 20 % en poids et de la matière sèche de lait exempte de graisse à raison de 16 à 55 % en poids et présente un degré de dénaturation des protéines sériques inférieur ou égal à 20 %.
