The present invention relates to a consensus sequence for the identification of acyltransferase enzyme in plants; which comprises at least a first amino acid sequence His-X1-X2-X3-Asp-X4 wherein X1 an amino acid selected from the group consisting of Ala, Arg, Thr, Cys, Asn, His, Met, Ile, Leu, Val and Lys; X2 is an amino acid selected from the group consisting of Val, Ile, Leu, and Met; X3 is an amino acid selected from the group consisting of Cys, Phe, Val, Leu, Met, Ala, Gly, Ser and Thr; and X4 is an amino acid selected from the group consisting of Gly, Ala, Ile, Met and Val.
