A continuous boiling apparatus (1) for organic materials, e.g. fish or offal from abattoirs, comprises at least one annular boiling zone (15) with an inlet opening (13) for the raw material and a discharge opening (4) for the heat-treated raw material. The annular boiling zone (15) is defined by circular, concentric heating plates (5), each made up of circular, concentric parts (6, 7) between which a heating medium is introduced (8). In the boiling zone (15) there are provided a number of feeding elements (10) with self-regulating scrapers (16) which lie up against heating surfaces (6) and divide the boiling zone (15) into sub-zones.

Un appareil de cuisson continue (1), destiné à des produits organiques tels que du poisson ou des abats provenant d'abattoirs, comprend au moins une zone de cuisson annulaire (15) dotée d'un orifice d'entrée (13) destiné aux produits bruts et un orifice de sortie (4) destiné aux produits bruts cuits. Cette zone de cuisson annulaire (15) est définie par des plaques chauffantes circulaires concentriques (5) constituées chacune de pièces circulaires concentriques (6, 7) entre lesquelles est intercalé un dispositif de chauffage (8). On trouve dans cette zone de cuisson un certain nombre d'éléments de chargement (10) dotés de raclettes auto-modulables (16) qui prennent appui verticalement contre des surfaces de chauffe (6) et divisent la zone de cuisson (15) en sous-zones.
