CONTINUOUS-FLOW WINE CHAMPAGNIZATION PROCESS ABSTRACT OF THE DISCLOSURE The present invention relates to a continuous-flow wine champagnization process. The starting fermentation broth consisting of champagne wine-stock, saccharose and yeast cells is fed into an appara- tus and passed through a yeast mass accumulated at a constant separation of yeast cells from the wine stream. The process according to the present invention resides in that a secondary fermentation of the starting fermentation broth is effected at a temperature of up to 150°C, followed by enrichment of the re- sulting champagnized wine with biologically active yeast subs- tances. Under the conditions of the process according to the present invention these two stages are combined. The process according to the present invention makes it possible to intensify champagnization, improve the product qua- lity and increase, by 2-3 times, the product output per unit production area.
