ABSTRACT OF THE DISCLOSURE: The present invention is concerned with a process for the manufacture of crystallised sorbitol, which comprises conti- nuously mixing molten sorbitol, having a content of dry matter of more than 90% and being in a sub-divided form, for example in the form of droplets, globules, bundles, jets, layers or sheets with 20 to 80% by weight of sorbitol in the form of fine powder. The mixing is carried out inside an open rotating receptacle with the axis of rotation preferably being inclined to the horizontal plane, at the surface of the mixture set in motion by the rotation of the receptacle. The process according to the invention enables to obtain crystallized sorbitol in a stable form at the best cost price.
