A package which allows for butchering and packaging of fresh red meat at a centralized facility is provided which includes an impermeable tray (12) supporting the product, a first film (70) sealed to the tray for enclosing the product, means defined within the first film for exchanging gases into and out of the package, and a second impermeable film (68) enclosing the first film, such that removal of said impermeable film provides for the exchange of gases, into and out of the package. The means for exchanging gases may be perforations (72) defined within the first film, a second highly permeable film sealed to the first film, or an enlarged opening formed within the first film which is enclosed with a patch following adequate gas exchange at retail. Such gas exchange is required to release any low oxygen atmosphere and allow for the introduction of oxygen to the packaged meat product. Said means for exchanging gases having a gas transmission rate of at least about 50,000 cc/m2/24 hrs./atm. at 73 °F.

Emballage conçu pour le traitement et l'empaquetage de viande rouge fraîche dans une installation centrale et comprenant un plateau imperméable (12) supportant l'article, un premier film (70) hermétiquement scellé sur le plateau et renfermant l'article, des éléments réalisés dans le premier film et permettant l'échange gazeux à l'intérieur et à l'extérieur de l'emballage, et un second film imperméable (68) renfermant le premier film de sorte que, lors du retrait du second film, l'échange gazeux s'effectue à l'intérieur et à l'extérieur de l'emballage. Les éléments permettant l'échange gazeux peuvent être des perforations (72) formées dans le premier film, un second film extrêmement perméable scellé au premier, ou bien une ouverture élargie formée dans le premier film, qui est fermée au moyen d'une pastille après un échange gazeux adéquat lors de la vente au détail. Cet échange gazeux est nécessaire pour libérer une atmosphère à faible teneur en oxygène et permettre l'introduction de l'oxygène dans la viande emballée. Ces éléments permettant l'échange gazeux ont une vitesse de transmission gazeuse d'au moins environ 50 000 cm<3>/m<2>/24 h/atm. à 73 DEG F.
