A convection and steam oven comprising an outer supporting casing (1), in which is housed at least a cooking chamber (3) to contain food, means (6) for heating the atmosphere in said cooking chamber (3), means for producing steam (40, 80), means for expelling steam (12) and a cooking chamber humidity detection and regulation system (100). The humidity detection and regulation system (100) includes at least first and second temperature means (90, 91), said humidity detection and regulation system (100) being adapted to operate said steam production means (40, 80) and said steam expulsion means (12) in response to the temperature values (T1, T2) detected by said first and second temperature sensing means (90, 91).
