A fry cooker uses a flow of cooking oil or other medium during the cooking operation to strain out or screen particles that cause degradation of the cooking oil or medium. There are several configurations of the fryer that achieve this result. One is a fryer with a first coarse strainer (13) and a second fine sieve (14) or screen. The first screen (13) is used to swiftly screen and separate coarse particles. The second (14) is used as a finer filter to separate finer particles. Either screen may also be adapted to hold a packet for chemically treating and preserving the cooking medium. Another configuration may include a fryer basket (50) that has a straining portion (53) for removing particulates from the cooking medium. The basket may have an upper sealing portion (51) and a lower straining portion (53).
La présente invention concerne une friteuse utilisant un flux d~huile de cuisson ou tout autre milieu lors de la cuisson afin de filtrer les particules qui provoquent la dégradation de l~huile ou du milieu de cuisson. Il existe plusieurs configurations pour cette friteuse qui permettent de parvenir à ce résultat. L~une d~elles concerne une friteuse dotée d~un premier tamis à mailles larges et d~un second tamis à mailles étroites. Le premier tamis sert à filtrer et séparer rapidement les grosses particules. Le second est employé en tant que filtre plus fin en vue de séparer les particules plus fines. Les deux tamis peuvent également être conçus afin de tenir un paquet permettant de traiter chimiquement et de conserver le milieu de cuisson. Une autre configuration peut comprendre un panier de friteuse possédant une partie filtrante qui sert à retirer les particules du milieu de cuisson. Le panier peut avoir une partie étanche supérieure et une partie filtrante inférieure.
