A B S T R A C T A convection oven is provided with a reversible axial fan (16) for circulation of hot air through the oven, and an air pervious protective plate (15) disposed in front of the fan. The protective plate has a central, pervious zone (15c), and a lateral pervious zone (15a,l5b) along each of its vertical side edges. Unpervious zones (15d,15e) are provided between said pervious zones.
