A convection oven includes a frame (14) having a base member (28) which rests on the supporting surface and two upright members (30) which extend upwardly from the base member. A cooking chamber is removably supported by the frame and in- cludes an upper enclosure member (18) and a lower enclosure member (16). A housing (44) is attached to the upper enclosure mem- ber. The housing has a central portion (46) and at least two arms (48) extending out- wardly from the central portion to beyond the outer edge of the upper enclosure mem- ber (18). The housing is configured so that cool air flows from a peripheral portion (80) of the arm into the central portion (46) of the housing and then is expelled from the arm over the upper surface of the upper enclo- sure member (18). Attached to the housing is a heater (57-60) for heating air within the cooking chamber and an air moving means (52-56) for moving air within the cooking chamber. A thermostat (64) is placed adja- cent to, but isolated from the cool air in the central portion (46) of the housing so that the thermostat more accurately reflects the temperature in the cooking chamber of the oven. The air moving means may consist of an axial-type hot-air fan (56') for routing the hot air in a substantially axial direction within the cooking chamber, and a fan shroud (62')surrounding the hot-air fan for providing an air duct in a substantially axial direction. A connecting means (90) connects the housing (44) to the frame (14) such that the housing (44) and upper enclosure member (18) may be both separated from the frame (14) and lower enclosure member (16) by lifting the housing vertically and pivoted relative to the frame and lower enclosure member between a first, closed and a second opened position. An extension ring (101) is disclosed for enlarging the size of the cooking chamber. A holster (51) holds the upper enclosure member and the housing when they are separated from the lower enclosure member.
