A convention oven (20) with laminar airflow and/or moisture injection. A radial airflow fan (38) is used to provide a circulating airflow that is substantially even and substantially turbulence free. The circulating airflow is provided to an oven chamber (28) via a plurality of egress ports (44) that rim a divider wall (42) disposed between the oven chamber and a fan chamber. The airflow interleaves with a plurality of pans (90) in the oven chamber to provide a laminar airflow. Moisture is injected into the circulating airflow either upstream of the fan or by flashing water onto the hot blades (78) of the fan from either the low pressure side or the high pressure side of the fan.

L'invention porte sur un four à convection (20) doté d'un flux d'air laminaire et/ou d'une injection d'eau. Un ventilateur à flux d'air radial (38) sert à fournir un flux d'air de chauffage sensiblement régulier et presque sans turbulence. Ce flux d'air de chauffage est fourni dans une chambre de cuisson (28) au moyen d'une pluralité de ports d'évacuation (44) qui bordent une paroi de séparation (42) placée entre la chambre de cuisson une chambre de ventilation. Le flux d'air s'introduit dans une pluralité de cuvettes (90) de la chambre de cuisson afin de fournir un flux d'air laminaire.
