There is provided a water-in-oil (w/o) microemulsion which readily converts to an oil-in-water (o/w) emulsion by the addition of aqueous fluid to the w/o microemulsion, whereby any water-soluble biologically-active material in the aqueous phase is released for absorption by the body. The w/o microemulsion contains a preferred high purity short chain monoglyceride surfactant. The w/o microemulsion is particularly useful for storing proteins and the like for long periods of time at room temperature and above until they are ready for use, at which time the addition of aqueous fluid converts the microemulsion to an o/w emulsion and releases the protein.

On décrit une microémulsion huileuse qui se convertit facilement en émulsion aqueuse par adjonction d'un fluide aqueux, ce qui permet à toute substance hydrosoluble biologiquement active présente dans la phase aqueuse d'être libérée puis absorbée par le corps. La microémulsion huileuse contient un agent tensioactif préférentiel à base de monoglycéride très pur à chaîne courte. Cette microémulsion huileuse est particulièrement utile pour stocker par exemple des protéines, sur une longue durée, à température ambiante et au-dessus, jusqu'à leur utilisation, moment où l'adjonction du fluide aqueux convertit cette microémulsion en émulsion aqueuse et libère les protéines.
