An accelerated cooking feature for use in an appliance having an oven cavity includes a forced air convection system having an electronic control unit, a variable speed, bi-directional fan motor, and a directionally vented cover plate. The appliance operates in at least three modes, constituted by a convection mode, a radiant bake mode and a self clean mode. In the convection mode, the controller operates the fan motor in a first direction at a speed dependent upon a selected cooking process, with various air streams being directed into distinct regions of the oven cavity. During the radiant bake mode, the controller operates the fan motor in a reverse direction to establish a uniform cooking environment. In the self clean mode, high speed air currents are directed into the oven cavity and, in combination with a top broil element, perform a pyrolytic cleaning process.
La présente concerne une fonction de cuisson accélérée d'une cuisinière pourvue d'un four qui comporte un système à convection et à air pulsé muni d'un élément de commande électronique, d'un moteur de ventilateur bidirectionnel à vitesse variable, et d'une plaque de recouvrement à ventilation directionnelle. Cette cuisinière a au moins trois modes de fonctionnement, à savoir la convection, la cuisson par rayonnement, et la cuisson autonettoyante. En mode de cuisson par convection, le contrôleur commande le moteur du ventilateur dans une première direction à un régime qui varie selon la cuisson sélectionnée, divers jets d'air étant dirigés vers certains endroits dans le four. En mode de cuisson par rayonnement, le contrôleur commande le moteur du ventilateur et lui imprime une direction inversée, de manière à produire un milieu de cuisson uniforme. En mode de cuisson autonettoyante, des jets d'air à grande vitesse sont soufflés dans le four et de pair avec l'élément de grillage supérieur du four, la cuisson s'accompagne d'un nettoyage pyrolitique.
