The invention relates to a cooking oven for bread, patisserie and pastry products or similar, comprising at least one cooking chamber (1) with a fixed or moving floor (3), on which said products are supported during cooking, whether directly or on a suitable cooking support (6), such as a plate a mesh or a cooking mould. Radiant heating means for the floor are arranged under said floor (3), called a floor hotplate (4), characterised in that between the floor (3) and the floor hotplate (4), a space (5) is provided for closed-circuit convective circulation of a heating fluid, the floor (3) having a permeable embodiment for a complementary heating of the products through the same by convection. The oven permits a combination at the floor of heating by conduction and radiation with heating by convection.
L'invention concerne un four de cuisson de produits de boulangerie, viennoiserie, pâtisserie ou analogue, comportant au moins une enceinte de cuisson (1) avec une sole (3) mobile ou fixe, sur laquelle reposent lesdits produits en cours de cuisson, soit directement soit au travers d'un support de cuisson (6) adapté, tel qu'une plaque, un filet ou un moule de cuisson, sous ladite sole (3) étant ménagés des moyens de chauffage par rayonnement de la sole, dits plaque chauffante de sole (4), caractérisé en ce qu'entre la sole (3) et la plaque chauffante de sole (4) est ménagé un espace (5) de circulation en circuit fermé de fluide de chauffage par convexion, cette sole (3) étant encore conçue perméable pour un complément de chauffage par convection des produits au travers de cette dernière. Ce four offre la possibilité de combiner au niveau de la sole un chauffage par conduction et par rayonnement avec un chauffage par convexion.
