A cooling method for controlled high speed chilling or freezing is disclosed. Cooling fluid is circulated by a submersed circulator, such as a motor, at a substantially constant velocity past a substance to be cooled. The velocity of fluid flow is maintained despite changes in the viscosity of the cooling fluid, by either increasing or decreasing the amount of torque supplied by the motor. The cooling fluid is cooled to a desired temperature by circulating the fluid past a multi-path heat exchanging coil connected to a refrigeration system. An optimal cooing fluid temperature for a variety of applications is in the range of about -24 ~C to -26 ~C, resulting in significant efficiency gains over conventional cooling processes.

La présente invention concerne un procédé de refroidissement permettant une réfrigération ou une congélation ultra-rapide. Le procédé consiste à faire circuler un fluide de refroidissement au moyen d'un circulateur submergé, tel qu'un moteur, à une vitesse sensiblement constante en défilement par rapport à une substance à refroidir; on maintient la vitesse de débit du fluide malgré les modifications dans la viscosité du fluide de refroidissement, soit en accroissant ou en réduisant la valeur de couple fourni par le moteur; ensuite on refroidit le fluide de refroidissement à une température souhaitée en faisant circuler le fluide en défilement par rapport à un serpentin échangeur de chaleur à canaux multiples relié au système de réfrigération. Un fluide de refroidissement optimal pour diverses utilisations se trouve compris entre environ -24 ·C et -26 ·C, permettant ainsi des gains de performance considérables par rapport aux procédés de refroidissement classiques.
