Un gel transparent ou translucide à base de polymère de type acide polyacrylique réticulé est rigidifié par au moins un ga- lactomannane (gomme de caroube, de guar ou de tara), en faible quantité. Le gel présente alors une consistance suffisamment ri- gide pour garantir la bonne stabilité en son sein d'inclusions constituées d'une émulsion eau-dans-huile ou huile-dans-eau, d'un gel, ou d'une dispersion aqueuse de vésicules lipidiques. La présence dans le milieu de sels, sinon incompatibles avec le polymère, ne perturbe pas l'état rhéologique du gel.
