A process for producing crystal 1-kestose wherein granular crystal 1-kestose in the form of large crystals can be produced at a high yield is disclosed. A high-purity solution of 1-kestose is concentrated to a Brix of 75 or higher; either seed crystals are added, or the solution is vacuum-concentrated to generate microcrystals for use as nuclei; then, a crystal growing step by vacuum-concentration and a microcrystal dissolving step for redissolving microcrystals which have formed in the concentrate are repeated at least twice each. Alternatively, a high-purity solution of 1-kestose is concentrated to a Brix of 80 or higher; either seed crystals are added, or the solution is allowed to initiate crystallization; after crystals are allowed to grow, a cooling step where the temperature is lowered by 5 to 20°C from the previous step and a crystal growing step where the concentrate is maintained at the temperature to allow the crystals to grow are repeated at least twice each. Also, an enzyme for producing 1-kestose efficiently from sucrose is disclosed.

La présente invention concerne un procédé de préparation de 1-kestose cristallin, sous forme de granulés très fins de sucre, avec un rendement élevé. Ce procédé comprend la concentration d'une solution très pure de 1-kestose l'amenant à un degré Brix d'au moins 75, le dépôt de cristallites servant de noyaux-mères grâce à l'addition de germes ou par concentration sous une pression réduite et par la répétition au moins deux fois de la production de cristaux par concentration sous une pression réduite et de la redissolution de cristallites produites dans le concentré. En variante, le procédé comprend la concentration d'une solution très pure de 1-kestose jusqu'à un degré Brix d'au moins 80, la formation de cristaux après addition de germes ou l'amorçage de la cristallisation, et la répétition, au moins deux fois, de l'abaissement de la température de 5 à 20 degrés C au-dessous de la température à l'étape précédente, et l'accroissement de la formation de cristaux du fait que l'on permet au produit concentré de rester à la température ci-dessus. L'invention concerne encore une enzyme qui est capable de convertir de manière efficace du sucrose en 1-kestose.
