.alpha.-Lactosamine hydrochloride, substantially free of .beta.-lactosamine hydrochloride; a method of preparing .alpha.-lactosamine hydrochloride monohydrate from an anomeric mixture of lactosamine hydrochloride, comprising : preparing a solution comprising the anomeric mixture of lactosamine hydrochloride, water and at least one water-miscible organic solvent at a temperature of 0 - 100 °C, and cooling the solution to cause crystallisation of .alpha.-lactosamine hydrochloride monohydrate; a method of preparing anhydrous .alpha.-lactosamine hydrochloride; and use of .alpha.- lactosamine hydrochloride as a food supplement or intermediate in synthesis.

Linvention concerne un hydrochlorure da-lactosamine, essentiellement exempt dhydrochlorure de ß-lactosamine; un procédé de préparation de monohydrate dhydrochlorure da-lactosamine à partir dun mélange anomère dhydrochlorure de lactosamine, qui comprend : la préparation dune solution comprenant le mélange anomère dhydrochlorure de lactosamine, de leau et au moins un solvant organique miscible avec leau à une température de 0 à 100 °C, et le refroidissement de la solution pour provoquer la cristallisation du monohydrate dhydrochlorure da-lactosamine; un procédé de préparation dhydrochlorure da-lactosamine anhydre; et lutilisation de lhydrochlorure da-lactosamine en tant que complément alimentaire ou intermédiaire en synthèse.
