It is intended to not only formulate a crystalline lactosucrose but also provide a process for producing a crystalline lactosucrose or molasses- containing crystal having the same contained therein, and further to provide a composition, for example, food or beverage, cosmetic or pharmaceutical, containing the crystalline lactosucrose. There is provided a crystalline lactosucrose, or crystalline lactosucrose characterized by being obtained through crystallization of crystalline lactosucrose from a molasses-containing crystal having the same contained therein or a lactosucrose-containing solution and collection from the crystallizate. Further, there are provided a process for producing a molasses-containing crystal having the crystalline lactosucrose contained therein and a use thereof.
La présente invention concerne non seulement la préparation du lactosucrose cristallin mais également un processus de production de lactosucrose cristallin ou de cristal contenant des mollasses contenant ce composé à l'intérieur et, une composition, par exemple un aliment ou une boisson, un produit cosmétique ou pharmaceutique contenant ce lactosucrose cristallin. Cette mention concerne un lactosucrose cristallin qui se caractérise en ce qu'il est obtenu via la cristallisation de lactosucrose cristallin à partir de cristaux contenant des mollasses possédant ce lactosucrose à l'intérieur ou une solution contenant du lactosucrose et un recueil de cristaux. Cette mention concerne enfin un processus de production de cristal contenant des mollasses possédant du lactosucrose cristallin à l'intérieur et une utilisation de ce composé.
