A non-seeded method for making crystalline maltitol is described. The method includes evaporating liquid maltitol to a moisture content of between about 4.5 percent to about 6.0 percent to produce a maltitol feed; cooling said maltitol feed with water at a temperature of between about 10 degrees to about 20 degrees Celsius; and extruding said maltitol feed without using a nozzle. The process is performed without a seeding step. A crystalline maltitol composition having at least 45% by volume maltitol crystals having a size of at least 50 microns made by the method is also described.

L'invention concerne un procédé sans germe pour fabriquer un maltitol cristallin. Ledit procédé comprend l'évaporation du maltitol liquide à une teneur en humidité comprise entre 4,5 et 6,5 pour cent, ce qui permet de produire une alimentation en maltitol ; le refroidissement de l'alimentation en maltitol avec de l'eau à une température comprise entre 10 et 20 degrés Celsius environ ; l'extrusion de l'alimentation en maltitol sans l'utilisation d'une buse. Le processus est réalisé sans étape de germination. L'invention concerne également une composition de maltitol cristallin présentant au moins 45 % en volume de cristaux de maltitol présentant une taille d'au moins 50 microns fabriquée selon ledit procédé.
