A cutting and calibrating device for dicing and stripping food, especially for portioning meat in cubes and slices, especially raw meat and comprising a moulding tube (55), a cutting grid (81) fitted at the end of the moulding tube (55). An improvement is characterised by the following: a calibrating cavity (49) is provided under the outlet of the moulding tube (55). Said calibrating cavity (49) is perpendicular to the advance movement of the food to be portioned into sizes corresponding at least to the cross-section of the moulding cavity (55). The depth of the calibrating cavity (49) is equal to the length of the cubes or slices to be produced.
L'invention concerne un dispositif de coupe et de calibrage servant à découper des aliments en dés ou en lamelles. Ce dispositif comprend, outre un moule tubulaire (55), une grille tranchante (81) montée dans la zone d'extrémité de ce dernier. Une empreinte de calibrage (49), placée sous l'ouverture de sortie du moule tubulaire (55), présente, perpendiculairement au sens d'avancement de l'aliment à découper en portions, des dimensions correspondant au moins à celles de la section transversale de l'empreinte du moule. La profondeur de l'empreinte de calibrage (49) est égale à la longueur des dés ou des lamelles de l'aliment à découper en portions.
