ABSTRACT OF THE DISCLOSURE She present invention relates to a perfume or flavouring composition containing at least one safranic acid ester having the general formula IV Image wherein the dotted lines represent two conjugated double bonds in the positions 2 endocyclic and 4 (.alpha.-isomer), 1 and 3 (.beta.-isomer) or 2 exocyclic and 3 (.gamma.-isomer), R1 represents a methyl group, or, in the .gamma.-isomers a methylidene group and R2 represents an alkyl group with 1-4 carbon atoms.
