ABSTRACT A process for decaffeinating vegetable materials is disclosed. A caffeine-containing aqueous extract of coffee or tea is contacted with liquid, water-immiscible fatty material and the two phases are then separated to yield decaffeinated extract. Use of elevated temperatures while the two liquids are maintained in contact provides improved decaffeination and promotes ease of separation of the pha- ses.
