ABSTRACT OF THE INVENTION A decaffeination process is disclosed wherein it is possible to significantly increase the overall rate of caffeine removal from green coffee. The process comprises pre-moistening green coffee and extracting the caffeine therefrom with suc- cessive contacts of an extraction medium while the system is maintained under constant agitation. By virtue of this process, overall decaffeination time can be markedly decreased or alterna- tively less severe extraction conditions can be employed.
