A B S T R A C T A method of removing colour causing constituents from yellow pea flour including the steps of extracting the flour with a solvent comprising a C1, C2 or C3 monohydric alcohol at a temperature above 40°C and not more than 30% water by volume to increase the extraction power to remove the brown colour causing constituents and then removing the residual solvent for the flour.
