The invention concerns a method for dehulling grains and the products obtained by said method, namely dehulled wheat grains and the hulls separated therefrom. The invention also concerns a specific installation for implementing said method. The inventive method for dehulling wheat grains includes in particular the following steps: a) cleaning the raw wheat grains; b) moistening the cleaned wheat grains; c) contacting the wheat grains with ozone, after they have been moistened at step b) or simultaneously with said step; d) separating the hulls from the grains of the mass of grains partly or completely dehulled at step c).

La présente invention se rapporte à un procédé de dépelliculage des grains de blé ainsi qu'aux produits obtenus par ledit procédé, à savoir les grains de blés dépelliculés et des pellicules qui en ont été séparées. Elle concerne également une installation spécifique pour la mise en AEuvre de ce procédé. Le procédé de dépelliculage de grains de blé selon l'invention comprend notamment les étapes suivantes : a) le nettoyage des grains de blé brut; b) l'humidification des grains de blé ainsi nettoyés; c) la mise en contact des grains de blé, postérieurement à leur humidification à l'étape (b) ou en même temps que celle-ci, avec de l'ozone; d) la séparation des pellicules des grains de la masse de grains partiellement ou totalement dépelliculés à l'étape (c).
