A method for forming a dehydrated leguminous food product for reconstitution into a ready-to-eat food product. The method comprises the steps of cleaning the food product, removing all unwanted material, tempering the food product until it is partially hydrated, steam cooking the food product in a low pressure steam environment, smoothly crushing the food product between at least one pair of rolls, dehydrating the food product, and breaking up the food product to a desired size. The food product produced by the present method has a moisture content of approximately 4 % to 14 %, and preferably 10 %. The product formed by the present method is instantly reconstitutable and has the color, appearance, texture, aroma, and consistency of conventionally prepared pea soup.

L'invention traite de la préparation d'un produit alimentaire déshydraté à base de légumes destiné à être reconstitué en un produit alimentaire prêt à consommer. Le procédé comporte les étapes suivantes: nettoyage du produit alimentaire, élimination des éléments indésirables, trempage du produit jusqu'à son hydratation partielle, cuisson du produit alimentaire à la vapeur dans un atmosphère de vapeur à basse pression, broyage régulier du produit alimentaire entre deux cylindres au moins, déshydratation du produit alimentaire et coupe jusqu'à obtention de la taille désirée. Le produit alimentaire élaboré au titre de ce procédé a une teneur en eau comprise entre 4 et 14 % environ, 10 % étant une concentration souhaitable. Ce produit ainsi obtenu, pouvant être instantanément reconstitué, a la couleur, l'aspect, la texture, l'arôme et la consistance d'une soupe aux pois confectionnée de manière habituelle.
