- 1 - Abstract: The present invention provides a dehydrating reagent which, in the production of frozen ground fish meat, enables the fish meat to be dehydrated after washing with water and improves the quality of frozen ground fish meat thus obtained. These effects are achieved by the use of a dehydrating reagent which comprises a combination of (A) magnesium and/or calcium ions and (B) sodium ions, in a proportion of 1 part by weight of (A) to 0.5-40 parts by weight of (B). The invention further provides a method of dehydrating fish.
