Electrodeionization is used to demineralize milk products and derivatives with cationic ion exchange resins and weakly anionic ion exchange resins in a mixed bed, or with a strongly cationic resin alone in the dilution and concentration compartments if raw materials are treated other than more or less concentrated milk. In the case where more or less concentrated milk is used as a raw material, the dilution compartments are filled with cationic ion exchange resins and weakly anionic exchange resins in a mixed bed. The process enables considerable savings to be made in water and energy without using regenerating chemicals.

Cette invention concerne un procédé de déminéralisation de produits laitiers et dérivés par électrodésionisation en présence de résines échangeuses d'ions cationiques et de résines faiblement anioniques mélangées, ou en présence uniquement de résine fortement cationique dans les compartiments de dilution et de concentration lorsque d'autres matières brutes que du lait plus ou moins concentré est à traiter.
