L'invention concerne une méthode améliorée pour conférer un arôme à un produit. Cette méthode consiste à ajouter à ce produit une quantité organoleptiquement efficace de dicarbonyle ou d'un mélange de celui-ci. Cette méthode améliorée consiste à substituer le dicarbonyle par un dérivé organoleptiquement acceptable de celui-ci de formule (I) ou de formule (II). Dans cette formule, m = 0, 1 ou 2; n = 1 ou 2, R1 et R2 désignent, indépendamment, un alkyle C1-4 saturé linéaire ou ramifié, à la condition que R1 et R2 ne désignent pas tous deux méthyle, et que X désigne un contre-ion. Typiquement, R1 et R2 désignent méthyle (voir condition ci-dessus), éthyle, propyle (par exemple n-propyle ou I-propyle) ou butyle (par exemple n-butyle, I-butyle ou t-butyle), ou un sel organoleptiquement acceptable de ceux-ci. L'invention concerne également des compositions pour mettre en oeuvre la méthode de l'invention, ainsi que des produits et que des articles de fabrication comprenant l'additif susmentionné.
